Free Time Fridays: Extreme Cooking

In our new weekly blog series-Free Time Fridays, we want to explore the novelty of free time. Instead of spending your much anticipated weekend chained to your home, take the opportunity to enjoy the things you love most. Each Friday we will feature a new bundle of activities to enjoy while Molly Maid does your dirty work…literally.

In my opinion, there are two types of people who enjoy cooking—People who watch the Food Network and people who take on the challenge of extreme cooking. People like me envy those who have conquered the art of cooking. This week, we are lucky to have a member of our own Molly Maid team, Stephen Bronte, willing to share his culinary creations and savory secrets about his favorite veggie, the beet.

Pasta dough infused with beets

Beets are a healthy and versatile vegetable.  Most often used in salads, beets have a wonderful fresh earthy taste.  But our beet connoisseur here uses them in far more interesting and creative ways. Stephen enjoys the flexibility these bold, colorful vegetables have to offer.  Once beets are roasted and pureed, they can make many common dishes full of flavor and unique color.  When pureed, Stephen added to beets to his semolina pasta dough and it transformed the dough into a deep purple with a rich taste.  A filling made with shallots reduced in a smooth Merlot compliments the pasta’s bold taste. When winter rolls around it’s time for comfort foods– Fresh baked bread is always a favorite.  This is another opportunity to be creative with beets.  Adding beet puree to bread dough creates a striking red color along with a warm earthy flavor.  Kids love the look of this stunning loaf and the adults love the unique, delightful taste. Stephen suggests topping the beet bread with garlic butter lightly topped with finishing salt.

There is almost no end to the many dishes beets can be integrated into.  If you like to cook with young children, beet juice also offers has some fun application.   Take a small paint brush and paint a design on your hand or fresh baked bread.  Just do yourself a favor and keep it away from the couch. For beginners like me, the basics are crucial: Try posting this kitchen cheat sheet on your refrigerator for an easy reference. You’ll feel great once you’ve created a fabulous beet-filled meal. Nothing “beets” that!
